Eddy Street's Signature Snack: November

November is a busy month and sometimes, you need something easy to make! So I am bringing back this favorite signature snack from last year!

'Tis the Season for pumpkin everything so when I heard about Pumpkin Pie Dip, I could hardly contain my excitement long enough to run to the store and get the ingredients. Plus it met the requirements of my kitchen: Easy to Make and Easy to Eat! Here's how to make it:

Pumpkin Pie Dip: 

Ingredients:

15 oz can of pumpkin
5 oz box of instant vanilla pudding mix (just the powder)
16 oz container of whipped topping
1/2 tbsp. pumpkin pie Spice

Optional ingredients:
Small- medium pumpkin
Cinnamon spice

Mix the pumpkin, vanilla pudding mix, whipped topping, and pumpkin spice in a large bowl and it's ready to serve. Or you can make the dip ahead and refrigerate until you are ready to serve it. 

My favorite dippers are fresh baked snickerdoodle cookies. If you don't have time to make them from scratch, check out Betty Crocker's snickerdoodle mix. Not only do they taste like you spent all day baking them, you can usually get the mix for under $2! It's a win win. Other dipping options include: sliced apples,  pretzels, Nila wafers, or graham crackers.
